I’m a chocolate nut. Also, if you don’t remember, I can’t get enough of any {and all} frozen treats. The time of year does not matter. Clearly. As I post this ice cream recipe during the month of January. This recipe is delicious and simple. I snagged the base of the ice cream recipe from my grandma’s ever-so-faithful Betty Crocker’s Cookbook but with a few updates {since I’ll be using the Kitchen Aid standing mixer ice cream maker attachment and the original recipe didn’t call for enough chocolate … or caramel sauce … }.
Let’s get started!
Homemade Chocolate Ice Cream
You’ll need:
- 1 cup milk
- 1 cup sugar
- 1/4 teaspoon salt
- 3 egg yolks, beaten
- 1 teaspoon vanilla extract
- 2 cups chilled whipping cream
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup semi-sweet chocolate chips, melted
- Kitchen Aid standing mixer with ice cream bowl, chilled in freezer for at least 8 hours
01. Mix milk, sugar, salt, eggs, cocoa powder and melted chocolate in a medium saucepan over medium heat. Stir constantly until everything is incorporated and smooth.
02. Continue to stir on medium heat until liquid starts to form bubbles around the outside. Just before the boiling stage.
03. Remove from heat, run through a mesh strainer to remove lumps and let the mixture sit until it reaches room temperature. If preferred, you can pop it into the refrigerator to help speed up the process.
04. Once completely cool, stir in the vanilla and whipping cream. Stir to combine.
05. Assemble ice cream maker and turn on to “1”.
06. Slowly add ice cream mixture to machine as it runs. Allow it to run for about 15 minutes or until it reaches your desired consistency.
07. Pour in freezer-friendly holder or serve it up and enjoy!
BONUS!
If you’re looking for a delicious but quick caramel sauce, you need to check out The Pioneer Woman’s recipe. No candy thermometer needed. B L E S S I N G.
You’ll need:
- 1 cup brown sugar
- 4 tablespoons of butter
- 1/2 cup cream (of half-and-half)
- 1 tablespoon Vanilla
- pinch of salt
01. Melt all ingredients in saucepan over medium to medium-high heat.
02. Let it come to a slow boil and bubble for a few minutes
03. Pull from heat and cool
Simply delicious! Hope you enjoy!!
