TGIF, amiright?? Whoever said lazy summers will continue into adulthood wasn’t exactly stating facts. Do we have relaxing nights and fun weekends? Absolutely. But all the in-between stuff can be exhausting. Oof! So, I’m ringing in another summer weekend with a few delicious drinks that are also really, really pretty. Even if you don’t drink, they sure are nice to stare at for a bit. {And, a lot of these, if not all, could be made into non-alcoholic versions by just eliminating the alcohol.}

Chamomile Honey and Whiskey Cocktail
6 chamomile tea bags
4 cups hot water
4 tablespoons honey
3 fluid ounces whiskey or bourbon
2 orange slices
3 lemon slices
Fresh chamomile flowers (optional)
1. To a pitcher or bowl, pour the hot water over the chamomile bags, being sure they’re completely submerged. Add the honey and stir until dissolved. Pour in the whiskey or bourbon and do a taste test. Feel free to add more, if you like. Add the orange slices and lemon slices. Allow the entire mixture to steep on the kitchen counter for 1 hour. Transfer to refrigerator until you’re ready to serve.
2. To serve, add a few ice cubes to each cocktail glass. Add the mixture (you’ll have to do this in a few batches), along with ice, to a cocktail shaker; shake vigorously. Strain, dividing the mixture between the glasses. Repeat and serve immediately. Garnish with fresh chamomile flowers, if you like.
Serves 4-6
Red Rover Blood Orange and Bourbon Cocktail
2 oz burbon
1 ½ oz blood orange juice
½ lemon juice
1 ¼ simple syrup
4 oz ginger ale
Garnish with fresh ginger, grated with a microplane or zester
1. Add bourbon, blood orange juice, lemon juice and simple syrup to a cocktail shaker, shake gently.
2. Add ginger ale and stir to combine.
3. Pour into a glass filled with ice. Garnish with fresh ginger.
Serves 1
Rosemary Gin Fizz
3 one-inch sprigs of fresh rosemary
1 small lemon, juiced
½ teaspoon honey
1½ ounces gin
3 ounces club soda
1. In a small drinking glass, muddle the fresh rosemary, lemon juice and honey.
2. Fill the glass with ice, then pour in the gin and top with club soda.
3. Give it a little swirl with a spoon.
Serves 1
Rhubarb Strawberry Margarita
Salt
Crushed ice
1 cup Quick Rhubarb Strawberry Jam
1/2 cup fresh lime juice
1/3 cup cointreau
1 cup tequila
1. Rim 4 rocks glasses with either an extra strawberry or lime wedge and dip in a bit of salt. Fill the glasses with crushed ice and set aside.
2. Stir together the jam, lime juice, cointreau, and tequila in a large pitcher breaking up the jam as much as possible. Add the ice, stir and pour into prepared glasses.
Serves 4
Whiskey Lemonade with Honey Simple Syrup
1/2 cup raw honey
1/2 cup water
1-2 stems of your favorite herb (basil, rosemary, lavender or mint) with a few leaves reserved for garnish
1/4 cup lemonade
1 shot good whiskey
1/4 cup soda
fresh lemon slices to garnish
Instructions
1. In a small saucepan, bring water and honey to a boil. Reduce heat, add an herbal sprig and simmer for 15 minutes or until reduced by half. Let cool.
2. Fill a short glass with ice and add one shot of whiskey. Add lemonade, soda and 1/2 to 1 teaspoon of honey simple syrup or to taste. Add reserved herb and lemon garnish and serve.
Serves one + extra simple syrup
