I’m a fan of quick and easy meals. I also started to realize that sometimes I cook quick and easy meals that make my family say “no way.” It’s not my fight right now {they will get veggies a million other ways} so I will continue to enjoy these meals by myself. Single portion cooking commence! No need to share. I didn’t want to anyway …
This meal is ideal for lunchtime, and it’s just for you!
Ingredients
1/3 cup quinoa
1/3 cup corn
1/3 cup black beans
1/3 cup chopped green pepper
cooked shrimp
taco seasoning
1 cup chicken stock
The Steps
01. Put 2/3 cup of chicken stock in a pan on stove and bring to boil.
02. Add 1/3 cup quinoa and 1/4 teaspoon of taco seasoning to boiling stock. Put lid on pan and reduce the heat to a simmer. (I also had extra cumin on hand to elevate that flavor a bit but seasoning is totally a personal preference. Go with what you love.)
03. While quinoa is cooking, assemble the veggies. Chop up 1/3 cup green peppers and measure out 1/3 cup black beans and 1/3 cup corn.
04. Prepare shrimp. If it’s frozen, cooked shrimp, place in a bowl of warm water to thaw. If uncooked, peel the shrimp and cook in separate pan on the stove just until the shrimp turns pink. Always peel and devein the shrimp.
05. Once quinoa is cooked, add to your serving bowl. Turn up heat on the stove, add in remaining chicken stock and 1/4 teaspoon of seasoning. Add veggies and shrimp to the pan and cook until heated through.
06. Assemble veggies and quinoa in serving bowl and enjoy!
So simple and good for you. And honestly, whatever veggies you like or have on hand would work for this bowl. These are just my faves. What would you add to yours??
